Traceability

Inside the EU the term “traceability“ is defined according to EU regulation 178/2002 as follows: “Traceability is the possibility of tracing back food, feed, food-producing animals, and any other substance intended to be, or expected to be, incorporated into a food or feed through all stages of production, processing and distribution”.

Data are the basis for efficient traceability
As early as 2002 ToolBox Software GmbH started to deal with this subject. As a consequence the production management system cabTool offered the possibility of traceability when the EU regulation came into effect and it has been adjusted continuously since. The fact that the logic structure of cabTool is based on the principle of counting backwards is an advantage to fulfil the EU requirement. All relevant data are raised and collected, based on the deadline when the freshly baked products have to be at the customer or outlet. For every single product the course of production is traced back by the minute. At the beginning of the process tis the stock of raw material and the weighing. Besides pure production data (e.g. how much time in the proofer requires a bread roll) staff and all machines and lines are recorded. At the end the complete bakery production is split into bits and bytes. During all the production processes every single batch can be traced. Furthermore there is additional information for every batch disclosing details on ingredients or raw materials used.
